DAIRY PRODUCE GRADINGS.

The figures of the Dairy Division of the Department of Agriculture show that the salted butter graded for January, 1931, was 12,481 tons, and the linsalted 452 tons, a total of 12,033 tons, compared with 13,361 tons salted and 246" tons unsalted, a total of 13,607 tons for January, 1930, a decrease of: 4.95 per cent. For the six months ended January, 1930, the respective quantities: were 61,536 tons and 2322 tons, <i total of 63,858 tons, compared with 61,319 tons and 1005 tons, a total of 62,324 tons for the corresponding period of the preceding season, an increase o£ 2.46 per cent. ■ The cheese graded for January, 1931, comprised: White 9508 tons,' coloured .4217 tons, a total of 13,725 tons, compared with 8899 tons white and 3651 tons coloured, a total of 12,540 tons for January, 1930, an increase of 9.44 per cent. The quantities for the six months ended January, 1931, were: White 38,719 tons, coloured 17,650 tons; a total of 56,369 tons, compared with 32,736 tons white and 17,856 tons coloured, a total of 50,593 tons, for the corresponding period of the preceding season, .an increase of 11.41 per cent. Converting these figures into butter-fat equivalent there is an increase of 5.08 per cent, in butter-fat production for the six months, as compared with the corresponding period of the 1929-30 season. Stocks held in various grading ports at 31st January, 1931, were: Butter 15,707 tons, cheese 13,832 tons, as compared with 11,336 tons butter and 11,619 tons cheese held on 31st January, 1030.
