BUTTER FROM PORT DARWIN
A report has been, received by the Department of External Affairs regarding a oask of butter which was forwarded by the 'Administrator of the Northern Territory. The butter was manufactured by Mr. Cahill at Oenpelli, and Messrs. J. Bartram and Sons report that on examining it, "We found it- to bo thoroughly well-made, and of good colour, texture, and body; a very coarse salt had been used in the manufacture. and the butter had been slightly heated before shipment, which affectcd the flavour. Considering the conditions under which it was made, it is a very creditable article, and we feel suro, that, with a well-equipped factory and proper appliances, a first-class article could be turned out, and sold to advantage in Darwin. It has been proved beyond doubt that butter properly made in hot climates keeps and carries well." Mr. Cahill points out that tho butter was made without refrigeration ; tho temperature of the dairy is from 82 to 90 degrees Falir. from morning until midday. He says he has lio-trouble to get the butter to come even on the hottest morning, and butter can bo made at any time of the year.—Sydney "Sun."
