The principal feature in the Blair aijd Allen Streets markets during the past week has been the decline in the value of mandarins, which Bold nt very low values indeed. The balance of the New 6011 th. Wales fruit sold at good prices, especially queen pines and oranges.' Mildura lemons are in keen demand, and Tasmaniiin apples, which, arrived on top of a fairly large consignment of American'?, 6how a slight decline. A better demand has been created for rhubarb of good quality, but cabbages and new potatoes, large shipments of whidi' are arriving daily, slow signs of weakening. Lemons i Milduras meet a keen demand, and sold at 12s. to 13s. per case; Sydneys, 6s. 6d. to 7s. 6d. Mandarins: Most lines being of dry varieties, at from 2s. to 53. 6d. case. Oranges: Demand good; late Valentias, lis. to lis. 9d.; Sydney, 12s. to 13s. 6d.; Island, 15a. to 16s. 6d. case. Passion fruit: Choice, 7s. to Bs. 6d.; seconds, 3s. to 55., at per quarter-case. Once upon a time there was really no assistance for the cheese-maker j he had to take "pot luck" with whatever crude apparatus came his way. And even a few years back cheese-making was an uncertain process. Then came the "Victor" Vat and with the advent of this most efficient aid cheese-making was lifted out of the "rut, 1 ' and is to-day one of the chief industries of this country.
