TO-DAY'S DINNER.
(Specially Written for The Dominion.)
MONDAY. Jiilienno soup. Canelons of beef, Potatoes. Looks. Stewed 'pears and blancmange.
CANEIXLVS OF BEEF. A pound and a half of cold beef, Jib. liaiii, 1 tablespoon chopped parsley, 1' saltspoon chopped herbs, }lb. breadcrumbs, 2 eggs, salt, pepper, thyme, grated nutmeg. Mince tho meat nad ham and then mix aif the ingredients well together; bind with tho eggs. Divide the mixture into three equal parts, sprinkle a littlo flour on a board and shape each roll nicely on it. Wrap each part in a greased paper, and bake about 20 minutes. Remove papers, and dish with the following sauce poured over:—
SAUCE. Clarified fat, }oz.; lcz. flour; J pint stock; 1 dessertspoon mushroom .Ketchup ; J teaspoon vinegar; salt and popper to tasto, \ teaspoon Worcester sauce. Melt the fat, fry the flour a nioo brown, thou add the other ingredients, miming smoothly.
FOR TO-MORROW. Stock. Six large potatoes. Two pounds veal cutlets, ltolls of bacon. White breadcrumbs. Apples.
