BORIC ACID IN BUTTER
.. A DAIRY EXPERT'S VIEWS. Giving ovidenco in Sydney before tho Dominions Commission, Mr. M. A. O'Cnllaghan, chief of tho dairy expert branch of the New South' Wales' Department of Agriculture, advocated tho allowing of a greater quantity of boric acid than at present in. butter. Tho acid, lie said, was used as a preservative to keep butler live or six weeks on its. way to England. Tho object was to inhibit bacterial growth in the butter. It was a safe and clfectivo method. It was not a question of tho adequacy of freezing chambers. The trouble arose before the butter was carried to the freezing chamber. . It was not real boric .acid that was used. Ho thought that' it would bo more healthy to uso il per cent, of boric acid titan salt as a preservative in butter. 110 was not awaro that prejudice against boric acid in foods,extended beyond foods for babies, who <lid not eat butter.
