Four penny sponge cakes, J-pint custard, 3 whites of eggs, red currant jelly, (i large apple-, «o;:. castor sugar, 1 lemon (rind grated, juice strained), chopped pistachio 11 Bake the apples slowly .until -they are fender, remove the skin and core and nib the pulp through a hair sieve. Cut the sponge cakes in slices, spread sonic red currant jelly mi each slice, and sprinkle on soiim! "rated lemon rind. Arrange the sponge cakes in the bottom of a glass dish, and cover them with eustavd. Whisk the whites of eggs to a still irovh.Mix (he castor sugar and lemon juice with tbe apple, add them to the whites or eggs, ami whisk altogether for a few minutes. Pile the mixture on the top ot the sponge cakes and custard m a rough heap, and decorate with some faiicitullyeut pieces of red currant jelly ami chopped pistachio nuts. FOR TO-MORROW.
