BOTTLING TOMATOES.
''Tomatoes are. always such a popular addition to a meal that the following recipe for bottling them, forwarded by a lady.who has used it successfully for 'years, may be greatly appreciated. It is as follows:—To each quart of water add one tablespconful of vinegar and salt to taste.. Bring to the boil. Carefully wipe —not wash—the,tomatoes, which must be perfectly sound and gathered on a dry morning; small, uniform size.preferred. Put into the stewpan and let gently simmer till fairly, soft—not broken up, though even such make an excellent addition to gravies in the- winter if put into airtight bottles. S'.ip the fruit into screw-top bo'tles, under which hold damp cloth-cover . with liquid (boiling point), and 'screw down immediately. Bottles must be airtight.'. Test -by standing at once on cud, when the defect can be remedied/. When required—any time within two years—pour away some of the liquid, stew up in remainder,' and thicken with flour, pepper (no fait), and butter, or pour, a wnite sauce over, them —or use.cold with tinned fish, etc. Keep in cool, dark'plnce.
