THE COOLING OF MILK.
INGENIOUS CONTRIVANCE. The heavy rejections of milk in some of the dairying districts last summer will no doubt cause many dairy farmers to cast a favourable eye on new cooling devices, and should also stimulate the ingenuity of the inventors whom the lJa- . tent: Office returns show to abound in the Dominion. The problem is to produce nn automatic cooler or aerator which will do its work and use a minimum of water, Water and being too plentiful ou many dairy farms on account of the cost of jji'inging in a perinr.nent supply. An ingenious arrangement, which is said to have been tried on several TarunaM farms with satit'sactory results is shortly to. bo put on the market. It is an aerator water-power, and its special merit is the small quantity of water used. Twenty or thirty gallons of water are claimed to be sufficient to aerate a considerable quantity cf milk through a hqt summer night. The aerator consists of a plunger which ljsts the milk and agitates it so that tho r.osious gases can escape freely. The pov.er is provided by a tank of water mid an ingenious contrivance of buckets. A tap is turned oh and the water (lows from {lie tank into a bucket which tips over when it is full, and thereby moves the plunger in ono direction. The water from this bucket tips into bucket number two, and eo on, through the series. The boahty of the arrangements is (list the wirier, after passing through the buckets can How into a lower tank and bo pumped back again for next day': , , use, or drawn on as required. The movement of the plunger and the rapidity of aeration are regulated simply by turning the tap full, half, or quarter on as may be required. The contrivance is the invention of Mr. Engs, of Taihape.
