Let us do soniething diiferent, soiuething with more skill needed, say, , pan broiied steak I with crisp iried hacon as n garni.sii. boiled potaloos, beans, bakcd tomatoes, j-ruit whip and custard, elieese scones. As before we will have to plan to see what we do iirst. Again the sweet is coid and is therefore the iirst step— iheu several hours before the meul we prepare fruit whip and make tlie cus tard. Colleet 1 eup of fruit pulp (fruit put through a sieve), i eup of fruit ; juice, 1 tablespoon lemon juice, 2 j tablespoons gelatiu, soaked in two j tablespoons of cold water and al- | lowed to stand several minutes. | Heat the fruit juice, add the gelatin j and allow to melt; add 2 tablespoons | sugar. Let coot aud when it is beg'in j ning to set beat hard with a dover egg beater until trothy. Add the fruit pulp; wash beater and beat the nhites of 2 eggs until stilf. Potatoes can gen j erally still be scraped rather than peel ed, and the beans are prepartd in the jordinary way — -string, vvash and slice. | Keep vegetables covered until luter. j Prepare tomatoes. Blanch Iirst by puttiug in a basin and pouring over boiling water. After "several minutes the skins craek and then can easily be re moved. Place the tomatoes in a shallou baking disli, season with salt and pepper and top with a small" no!) ot bacon fat. Cover with a eloth and stand aside till later. All this prepatatiou now, early/is because we want to make a batcli of scoties as wqll. If we make them at - a suitable time we can utilise the heat from the oven for cooking the tomatoes. JScones: 2 cups flour, 2/3 eup milk or water, 2 tablespoons shortentiig. 4 tea-spo'ons baking powder, 1 teaspoon salt, 1/3 eup of cheese. Sift the dry ingredients aud cut in the shortenin'g with 2 knives or a pastrv cutter. ala^c a hole in tlie centre of the mircture and pour uearly alJ the" litpiid in at once. Mix very lightly to a soft dough. Koll lightly or pat into a sheet. Cut into rounds, place on a groased tray, bake in a nioderate oven, 450 deg. Fahr. for 12-15 minutes. The cheese can be added with the dry ingredients or it can be sprinkled on top of each scone before it goes into the oven. .12.30. — About I hour before dinner, the potatoes go on. Put in boiling salted* water with several . sprigs - of niiut. Cook with the lid 011 until soft. The beans also go into boiling salted water and cook with- tlie lid 011. Tha. is ' ' try out" the fat. Piace the steak in the pan and cook 1 minutd, tuni and cook for 1 minute on the otl: side. Turn and give 5 minutes encl | side until cooked. To serve — garnisj ) the steak with the 'bacon and add, a small sprig of parsley.
