Witlof
Sir, —I would like to correct your statement that witlof is a Dutch cabbage. To me it sounds like calling clover a grass. Witlof is known as chicory, and Belgian endive. It is a cultivated variety of chicory, Cichorium intybus, which belongs to the family Compositae and not to the Cruciferae as cabbage does. It looks more like a white variety of cos lettuce though the flavour may resemble that of celery. For further information see N.Z.
