Dear Aunt Daisy, I read with interest your recipes for spring chicken (Listener, Oct, 29), I should like to tell you my experience in preparing fried chicken, using quick frozen cut-up chicker. Roll pieces chicken in seasoned flour, dip in beaten egg, then breadcrumbs. Fry in deep fat until golden brown, then drain. Cover in casserole with two tablespoons water, place in moderate oven (350 degrees) and cook for 20 minutes. I served the chicken with mashed potatoes, parsley and peas. It served four, and was an experiment so well received that I have Tepeated it often. My appreciation for the asparagus recipes published in the October 22 Listener, especially asparagus souffle, which made a super Sunday evening dish.
