PANCAKE DAY
Shrove Tuesday, February 21, is Pancake Day, PLAIN: One teacup flour, 1 egg, 2 pint milk. Put flour in basin, make a well in centre. Drop in yolk of egg, mix carefully, adding gradually 2 the milk, Mix to very smooth batter, beat a few minutes longer, then stir in rest of milk, and leave to stand about 1 hour. When ready to fry pancakes whisk egg-white to stiff froth, adding pinch of salt, and stir it lightly into the batter. RICH: Put 3 oz. flour into basin with Y2 teaspoon salt. Mix gradually with ¥2 pint milk, working to smooth paste; then add 3 eggs, well beaten. To Fry Pancakes: Use small pan. Melt small piece lard or butter and when it begins to smoke faintly pour in just sufficient batter to cover the pan. Fry till golden brown, turn over with flat fish-slide, and br on other side. When cooked dish on soft paper, dredge with castor sugar and sprinkle with lemon juice; fold in half arid keep very hot till others are ready.
