Dear Aunt Daisy, As a constant listener to your helpful hints I thought you may be interested in the following. I made a boiling of marmalade to a proved recipe and for the first time this boiling refused to set. I made several inquiries, but the only information I could obtain was to boil it again. I experimented as follows with marked success, Not only was the colour maintained, but the marmalade set beautifully. I reboiled 10 minutes at a rolling boil, then added 1 teaspoon citric acid and boiled 2 minutes, The result is perfect.
