Dear Aunt Daisy, Being an interested listener, I would like to tell you the way I preserve beans, in brine. To the required quantity of cold, water add sufficient salt to float an egg. Boil for 10 minutes, cool and strain. If the brine is put into a large jar, the beans can be added as collected from the garden, They are not so salty as when done the other way-alternate layers of salt and beans. Slice the beans before putting into brine. When wanted for use, wash well in cold water before

cooking.
