PRESERVING TOMATOES
RELIABLE METHODS The following is a recipe for preserving tomatoes without salt. Peel 41b of tomatoes (drop first into boiling water to loosen the skins), and put them in a pot with one heaped tablespoon of butter. Bring to the boil and cook gently for half an hour. Lilt tomatoes out carefully, place in jars and fill with juice. Put lids on immediately and make sure they are airtight. Preserved by this method, the tomatoes will keep for 12 months. It is better not to do more than 41b at once, as the bottom layer gets overcooked. Here is another recipe: Wipe tomatoes and drop a few at a time into hot water and peel them. Place peeled tomatoes into jars, put Uds“on loosely and cook in a slow oven. When cooked fill up the jars from an extra one and screw lids on tightly.
