ORANGE CAKE Ingredients: soz butter, soz castor sugar, 3 eggs, Boz flour 1 teaspoonful baking powder, grated rind of an orange, 12oz icing sugar. Cream the butter and sugar together and beat in the yolks of eggs one at a time. Whip the whites and add them to the creamed mixture. Then lightly fold in the flour, baking powder, grated orange rind. Put the mixture into a greased tin and bake for threequarters of an hour in a quick oven. Sieve the icing sugar, add the orange juice and enough water to make it into a thick cream. When the cake is cold pour this over the top. If liked, before the cake is iced, it can be split in two and a filling of orange butter icing put in the centre.
