Two More Bell Tea Redpes for Evening Parties ASPARAGUS HORNS Flaky pastry made from 4oz flour 1 egg 1 bundle cooked asparagus (cold) 1 cup cold chicken salt and pepper 1 gill mayonnaise or salad cream Roll out the pastry as thinly as possible, and cut into long strips three-quarters of an inch wide. Wind each of these round a cornucopia tin, beginning at the bottom and taking care not to pull the pastry. Brush with egg and lay on a baking-sheet, but let them stand for twenty minutes before baking, so as to give the pastry time to lose its elasticity, and thus make the comets a good shape. Bake for fifteen minutes in a moderate oven. When cool, fill with the chopped chicken and mayonnaise and stick asparagus in each horn. CHEESE PASTRIES Jib flaky pastry 1 hard-boiled «CK 1 gill cream cayenne * 4oz grated cheese 1 egg (beaten) Roll out pastry and cut twelve large rounds with fluted cutter. Place six large rounds on baking-tin and brush with beaten egg. Sprinkle with cheese and cover with another large round. Brush with egg. With a small cutter cut out centre of top round only. Brush these with egg and bake separately on dish. Leave to set for 20 minutes, then bake 20 minutes in hot oven. Beat cream, chop egg, add rest of cheese and cayenne, and fill the pastries, when cold, with the mixture. Place small lids on top.
