TODAY’S RECIPE
APPLE AMBER Reauired: 1 lb cooking apples, 1 oz butter, juice and grated rind of i lemon, 2 oz castor sugar, 1 egg. pinch ground cinnamon. 1 tablespoon sifted icing sugar. Peel and slice apples into a saucepan. Add butter, grated lemon rind, strained lemon juice, cinnamon and castor sugar. Cover and simmer till tender. Beat till smooth. Stir in egg yolk. Pour into a buttered piedish. Beat egg white to a stiff froth. Stir in icing sugar. Pile on top of apple. Bake in a very slow oven till pale golden and set. Serve with cream.
