TODAY’S RECIPE.
ragout OF RABBIT Required: 1 rabbit, 1 oz. flour, i lb. bacon, i shallot, 1 pint water or stock, i carrot, t turnip, 1 onion, salt and pepper. Wash, clean and joint rabbit. Cut bacon into neat slices and fry in a stew-pan. Remove and keep hot. Slice vegetable*. Put them together with jointed rabbit into the bacon fat. Fry together till brown Add flour. Stir till brown. Add 1 pint of water or stock. Season to taste with salt and pepper. Simmer 1J hours. Serae rahbit with sauce poured over, then bacon arranged round and vegetables helped OB lop. II SOB like sweet corn, add a tin aiid j cup stewed or tinned tomatoes, together with .' mrdlu mt potatoes, thinly sliced, to rabbit, ia minutes before it is ready to serve, but in that ease emit the flour.
