is one of the two of Its size in the North Island, and has a capacity of 75 cubic feet, with separate compartments to prevent the mingling of the flavours of the different foodstuffs stored. For keeping the food heated there is the latest Rain Marie with a great deal of space, and perhaps most Interesting of all Is the wonderful stove, which needs to be stoked only three times a day with an amazingly small amount of coke, and, left banked up, does not need re-lighting in the morning. The stove is worked on the principle of heat storage and retains the heat to a peculiar degree, the ovens being of different temperatures which bring the cooking down to a fine art and facilitate much quicker working. The top of the stove consists of hotplate space, and it has special cast-iron pots which sit absolutely flat on the surface of the stove and so waste no heat. The polished steel stove tops and cream enamelled sides make cleaning practically negligible, as do also the very small fireplaces. With the kitchen in full working order it is estimated Lint 750 people could be served comfortably In two hours. Modern and attractive uniforms in Fold and brown, and others in green ♦nd gold are worn by ttic waitresses, kith small latticed caps.
