cANnIED ORANGE PEEL. 3 Wash, dry and cut the peel : into ivinch wide strips. Place t them in a saucepan, cover with ‘ cold water, and bring slowly to ‘ z the boil. Drain or? water, add fresh water, and repeat the boil—ing up, draining and adding i fresh water process three times. Measure the rind, return it to ' saucepan, add an equal quantity : of sugar, and just enough boil— ‘ ing water to cover. Simmer till ‘ the rind is clear and tender, than ‘ cool, drain from the syrup, and . roll in caster sugar. Spread on z ‘ wax paper to dry overnight; next day, roll the rind again in castor sugar.
