CANTERBURY MUTTON IN ENGLAND.
Tub following extract from one of Mr Henry Reynolds' letters is very interesting, as showing the groat advantages obtained by breeding the right class of sheep and then grading them carefully before freezing tor the British market. Mr Reynolds says:—"The London papers give separate quotations for Canterbury mutton, which is almost invariably well selected, and of prime quality. The quotations appear thus -.—Canterbury mutton, — per stone ; New Zealand mutton, — per stone ; the former being always considerably higher in price limn the latter. This would give a stranger the impression that Canterbury and New Zealand were two different countries. 1 have interviewed dozens of the principal London butchers and meat salesmen, and their unanimous verdict is that Canterbury mutton is by far the most suitable for the English market. Otago comes second, and Southland a good third."
T<> th's we may add that from the correspondence upon the subject, which has lately appeared in our columns, our farmers should bo pretty well informed as to the particular breeds which are held most in favour in Canterbury.
