WINE-MAKING IN WHATAWHATA.
Among other signs of progress in Waikato, is the number of persons who are devoting their attention to making wine, from the various fruits for which this district is so noted. The latest to outer the lists in wine-making is Mr P. Iwerseu, of Whatawhata, whose gooseberry and elder wine, now just a year old, has been pronounced by good judges, to be of the very first quality, boll) as to colour and flavour. It is to be hoped, now that good fruit is grown in Waikato, in such quantities, as to be, at certain seasons almost worthless, that more attention will be given to turning it into useful and wholesome beverages, and into tho canned and dried fruits of commerce. Tlie grape season is at hand, and both growers and manufacturers, will do well to come to terms, and for once do away with tho farce of selling the fruit by auction, which simply moans, giving it to the retail dealers, and finally wo would suggest to those genial spirits, who prefer a glass of something stronger than tea, that they will give tho preference to Waikato wines, made from good sound fruit, instead of the drugged and watered stuff, the chief merit of which, as the Yankees would say, is, that it bites all the way down.
