Tin: Chekse and Bacon Factory.— Tim above factory has now boon taken over by Mr Henry Reynolds, who commenced operations on Monday morning with about ■IbO gallons of milk. The necessary alterations have been carried out by Mr David Richardson, of Cambridge, under the supervision of Mr Reynolds, and as far as completed appear to be in every way satisfactory. The large vat formerly used by the company has been raised on tressels, and acts as a feeder to the separator, This is of the Danish pattern, making 2000 revelations per minute, and capable of separating RIO gallons an hour. The skim milk—at the time wo saw it—was running to waste, as Mr Reynolds could not obtain the requisite supply of pigs to consume it, This will be altered' in a short time, as it will bo .seen by referring to our advortisingcolumns that Mr Reynolds intends going thoroughly into the business, and will doubtless turn out good bacon, as well as butter. Unfortunately, the churn ordered by Mr Reynolds had m>t arrived: consequently the. cream was being sent to his I’ukeknra Factory to he churned. A refrigerator will shortly be erected, and two cooling chambers for keeping the hotter, which will ho brought from his other factories to he hero packed in cases, each of which will contain a lump of ice, so that it will arrive in Auckland as cool ami fresh as if it had just been made. Through being disappointed by orders not being executed, Mr Reynolds is working at a "feat disadvantage, but wo hope soon to seethe factory in full swing.
