The demand is in.,;.-i-ing e.vry year, it takes gibs, of bon--y to make a gilioti ' i vinegar, and two years time to in ike. We make the mast of ours oa*. of refuse honey, or honey that we cann it u-e for any other purpose, and would otherwise he lost or wasted. \Ve retail a large quantity of hooey ; .ami when the homy iseandhd tier- will he a e m-id-r----ah’c (juantity 1-ft sticking to the sides of the birr- ’-s. We alwavs wa-h -ei" all ibe barrels we expe-l to u- • again. The lir-t washing tint takes off the honey we put in the vinegar. It i-clean: it is nothing hut honey and water. Tien, again, when we are extracting honey we have a hotc with a wire eloth bottom, which we set oxer a barrel that has the upper head out. Into this box we put what cappings we have to drain out the honey. In twenty-four hours nv empty those cappings into a harr-1 that has some wat-r in it, to soil: out what honey remains, straining th-m once or twice ad ay. The hamd will hold what cappings we get in a week. About once a week we strain out the water an 1 put it in the vim-gar and melt the cappings ini.i wax. as there is nothing hot.
