SW/SS CHEESE FACTORY, PUKERIMU.

This fact try, to which we referred at length some time ago, commenced operations at the beginning of the year, and bids fair to succeed. The cottage on Mr Uane's farm has been converted into a factory, and Mr Fischer, the pi opnetor, has got his plant, which, as yet, is of a somewhat primitive character, is in full woiking older. A good supply of milk hah been afforded by the settlers m the ncinity, and for this the high [trier of 4^d a gallon is paid. A new arrangement has, however, been come to, whereby the factory collects the milk from the f.n mere, instead of the latter sending it to the factory, and the price per gallon has m consequence been reduced to 4d. Mr Fischer considers himself warranted in giving a higher price for his milk supplj than the other factories, as his cheese will command a higher price in the market, being a. specialty and of superior quality. A large number of small cheeses h.ue aheady been made, averaging about l^b^ each. Thet.e are for household pm poses and are expected to meet with a ready demand in the local market. The making of condensed milk will not form a feature in tho-factoiy this season, but should thn present undertaking turn out well, it will be taken in hand ne\t season.
