REVOLUTION IF BUTCHERING OPERATIONS.

Tjtk Tamworth News amongst its Sydney news lias the following item :— An event of the week has been the sale by auction, on the part of the Government, of ' a number of carcases of beef and mutton, frozen in the new and complete buildings at the Glebe Island Abattoirs. Let it not be understood that the means to add to its many vocations that of butchering. The sale was onty an experimental one— to show the butchers what the meat trade of the future will resemble. The idea of the Government is to freeze all meat killed at the abattoirs gratis, and let the public reap the benefit. Of course the saving to the butchers during the summer months will be, very great. So it will be to the housewives who will know when they buy a piece of frozen meet that it will be good for at least three days. Of course it will be more wholesome than beef taken from a bullock that was alive a few hours previously. All the beef butchers in' the city attended the sale and. purchased freely at 3d per Ib. for beef and nearly 3d for mutton. In all human probability the system of metropolitan slaughting is doomed. »Vhen the railway is open from the north' to Sydney there will be ; slaughtering paddocks as far as north as Tenterfield, where travelling stock from Queensland will be impounded, killed, the meat frozen and taken to Sydney in specially constructed trucks. The saving to humanity, and the prevention of waste would be immense. '
