BEETROOT SUGAR.

• The following letter has been received by Mr W. A. Graham from his Hamburg correspondent, Herr Schneemann :—: — From the following account of the Board of Statistics on the fabrication of beetroot sugar during the present season in the German " Zollvcrein," it becomes evident that this branch of agriculture has attained immense importance in Germany, during a comparatively short number of years, providing remunerative employment for a considerable number of people, and extracting from the soil the primary matter, which, in its improved state contributes to the alimentation of mankind. It is difficult fully to appreciate the importance of these efforts, the more so as it has been proved that the crops ot cereals do not suffer in the least by the cultivation of the sugar-beet, for by the more extensive tilling of the soil the crops are materially increased, and rust in wheat and other diseases to which formerly many cereals were subjected have since disappeared. Besides, making use of the residue and offal of the factories for the alimentation of cattle, the nourishment of the latter becomes more efficacious. During the current season there has been in activity 333 factories of beetroot sugar, consuming to the Ist December last 66,274,796cwt of beet, to which may reasonably be added 55,905,53dcwt, as representing the amount which will have been treated during the remainder of the season. The entire quantity of sugar-beet consumed in the factories during the season would thus amount to 121, 908, 534c wt., or 25,803,354cwt. in excess of the previous year, during which there were 323 factories in operation. A table of the Board of Statistics shows the following interesting comparison about the sugar production and trade at the beginning and end of the last decade in the German "Zoli verein " :—: — - < •
