CHEESE FACTORIES.

TO THE EDITOR. Sir — The remark made m your last issue, that you are surprised no steps have been taken towards the establishment of a cheese factory in the Cambridge district, set me thinking about a suitable locality. Living in the Pukerimu district I can count within a distance of two miles or so on eacli side of Walker's Gully, ( along the Ohaupo load, about fifteen farms, in an advanced state of cultivation, and yielding luxuriant crops of gia&s and loots. These farms could, I believe, amply support a cheese factory. But, exactly opposite them, separated by the Waikato river, is an equally fertile, and perhaps more extensive district, also capable of maintaining a factory. Were these districts united by a river crossing, say somewheic in the neighbourhood of the Messrs Fisher's property, the settlers on both sides of the river could co-oper-ate in establishing a cheese and bacon factoiy on an extensive scale. Inespective of the factory, a budge somewhere about the point named would be of gieat public service, and the want of it is much felt. 1 tiust these lemarks may set some of the influential settlers in the district named at work to secuie for it the double advantage of a cheese factory and nvci ciossing. I am, &c. — Observer,.
