THE WAIKATO BREWERY.

Our reporter lately paid a visit to the Waikato Brewery, (Mr Oumming's.) Hamilton East, and was gratified at the many improvements which have been effected both in the building and the apparatus. A store has been built close to the river, with a wharf alongside, at which steamer* can discharge with convenience aud despatch. G-oing up the dray track from, this point to the brewery, we notice that the weather-boarded end of the brewery, where all the machinery and Apparatus were formerly placed, has been pulled down, and replaced by a substantial brick structure. When Mr Cumrnmg first eieoted the brewery, he consulted an engineer as to tho practicability of raiting the water sufficiently high to directly supply the wa er boiler, and to fall irom there to ihi various points nquirod. The engineer was of opinion that the proposed plan was not practicable. The wort had formerly to be pumped by hand which occupied considerable time. Mr Cummin^, however, determined to become his own engineer, anil, by taking new levels, rai-ed the delivery of water a height of six feet, bringing it in at the top of the bui ding It no w flows from one receptacle to another, through the refrigerator, therme lulling* distance of about" 3Gft to the n/er. His propose j to utilize thia flow ot water as the motive power of machinery f>r grinding malt at the store, on the river bank. This will be a great improvement on the plan hitherto adopted of grinding by hand.
