A correspondent of an American paper, writing; in January last, says ; " I am now using butter on my table made in June and July last that it would take one of the sharpest experts to detect as packed butter.' Three years ago 1 adop ted the plan of making the butter into rolls, wrapping them with cheese cloth (parchment paper I consider the best), packing into new pork barrel*) and covering with a strong brine that will float an egg. Cover the butter with a brine so that the air will not come in contact with it again until wanted for use. Time leema to bare no effect on the butter when propirly handled in this way. My butter is just as fresh to-day as when it went into the brine. Those trying this method for the first time need have no fears about the butter getting too salty, for the reason that the brine will not penetrate the butter when packed in a solid mass." L. J.
