TO <THE EDITOR. Sir, —Although I am nob in any wvy connected with the baking business, I would tike lo say 1 think “ Anxious Paten ■ ” is not allowing the bakers fair play. Aa a business m»n my.'oif, I think he should have allowed for such itcias as icnl, bring, the keep of horses anil carts, the eiuplo> incut of a number of ha-ids, and th-i very frequent through bad dobts; also, interest on capital lying out ia the same. It ae ids a man in husiaa-’B hi ms If to know all about its disadvantages ; outsiders see on'y the rosy side. Besides this, the cost of production in every line has risen greatly during the last year, and bakers re bou..d to feel it aa well as anyone else. —I am, etc., Fair Plat.
