THE SHEPHERD BOY’S DISCOVERY
Have you ever tasted Roquefort. iheese? It is very good indeed, and i the secret of making it was discovered , quite by accident by a shepherd boy! ; One day this shepherd boy left some bread and cheese on the natural shelf | of a rock in a cavern —and forgot all about it! Some months later, he re-’ turned and found the cheese still there. But. instead of being dry and nasty, it was beautifully creamy and moist, and had veins of greenish rrould running through it. He tasted it, and found it so deliclr ous that he told his mother about it, and the news of his discovery spread through the village. Thereafter, all cheese made by the villagers was put into the caverns to ripen. Now, of course, the caves are owned by a company and cheese-mak-ing has become a big business. But even in the hottest weather it is so cold in the caves that the women workers have to wear woollen clothing.
