SHERRIED PEARS. Peel ripe pears, cut through centre, and remove core; boil 1 cup sugar with | cup water until sugar is dissolved. Allow to cool, then add i cup sweet sherry and enough cochineal to give a pale pink colour. Add pears and see they are well coated with syrup. Serve very cold.
