SPINACH

AN ESSENTIAL CROP. Spinach is now considered one of the most essential crops in the vegetable garden. It takes up comparatively little space and yields an abundance of green vegetable. One of the drawbacks in the cultivation of spinach is that it runs to seed during hot weather. This trouble can be overcome by sowing small quantities of seed at intervals of three weeks and by sowing the summer crops in slightly shaded positions, such as between rows of peas. Spinach likes deep, rich soil containing plenty of humus, which ensures' a cool, moist root run. Sow in drills one inch deep and thin the seedlings to nine inches apart. It is a mistake to allow the plants to remain crowded as this encourages them to “bolt” quickly,
