TWO RECIPES. Here are two recipes for milk bread rolls:—The first is: Take lib. flour, 4 teaspoon salt, 1 tablespoon butter, 1 dessertspoon of baking powder, and enough milk to make a nice thoroughly moistened dough. Rub butter into flour, add salt and baking powder, and mix with a wooden spoon. Turn out on to a floured board and knead a little lightly. Roll out thinly, brush over with milk, cut into strips, and roll to make a 3fold roll in sizes to suit. Brush tops with milk and bake on a cold tray in a hot oven for 10 minutes. The second is: lib. flour, 1 teaspoon salt, 4 oz. compressed yeast, i pint milk, 1 teaspoon sugar, 1 egg, 1 oz. butter. Cream yeast and sugar, warm butter and milk, add to well beaten egg. Add yeast, etc., flour, and mix with a wooden spoon. Stand in a warm place one hour. Divide into 18 buns, warm for' 15 minutes, brush with milk, and bake in hot oven for 15 minutes. This can be made without egg if necessary.
