BAKED LIVER LOAF

TRY THIS FOR DINNER. Wash 1 calf's liver weighing about 11 to 21b. Place in a basin and cover with boiling water, and allow to stand for 15 minutes. Drain well and put through a mincer with -Jib. fresh pork cut from the leg and 2 onions. Mix with 2 cups soft white, breadcrumbs, 3 tablespoons chopped parsley, pepper and salt to taste, and 2 slightly beaten eggs. Mix all well together and press into a wellgreased loaf pan and bake in a moderate oven for 1 hour. Turn out on to a hot dish and surround with mashed potatoes. Serve with a good brown gravy.
