BROWN FRUIT CAKE. Cream -1 level cup butter, add 1 level cup brown sugar, and beat until light and fluffy. Add 2 egg-yolks, beaten together with cup coffee essence or very strong black coffee, and one-third cup top milk. Beat well together and add the following: Sift together level cups plain flour, 3 level teaspoons baking powder, a good pinch salt, add Mb. raisins, 4oz. finely chopped mixed peel, and, if liked, 2oz finely chopped ginger. See that the fruit is well coated with flour, then add to butter mixture. Lastly fold in the 2 egg-whites, beaten to a stiff froth, then turn mixture into a well-greased and lightly-floured loaf tin and bake for about 45 minutes in a moderate oven.
