LEMON TART
SOMETHING TASTY FOR DINNER. Line a tart plate or flat ovenproof dish with a good short 'crust and decorate the edge with rounds of pastry slightly overlapping each other. Bake in a hot oven for 10 minutes, then decrease heat and bake until a pale fawn colour and baked right through. Fill centre with lemon cheese and cover with a meringue or decorate with small shapes of pastry baked separately. Bake in a cool oven until meringue is set. Serve hot or cold. To make lemon cheese: Molt 1 cup sugar in a saucepan with J cup lemon juice, add 1 tablespoon butler and stir until melted. Add 3 beaten egg-yolks and stir over a low gas until thick. Two egg-yolks and 1 heaped teaspoon cornflour diluted with 1 tablespoon cold water may be used instead of 3 egg-yolks.
