RHUBARB PUDDING. Well wash and try 1 bunch rhubarb and cut into 1-inch pieces. Make a dough as follows: Sift Boz. plain flour with 1 teaspoon baking powder, a good pinch salt, and 1 level teaspoon ground ginger. Rub in 1 tablespoon butter or margarine, add 1 dessertspoon sugar, and enough milk to make rather a soft but rollable dough. Line a. pudding basin with some of the dough; divide the remaining dough into 4 equal parts and roll out thinly. Place a layer of rhubarb in bottom of lined basin, sprinkle with sugar and a little ground ginger, then another layer of paste, having paste for top layer. Cover well with greased paper and steam for 1 hour. Turn out and serve with a sweet sauce.
