A DELICIOUS CAKE
ORANGE AND PINEAPPLE. Beat 3 eggs well, add 3oz castor sugar and beat over hot water until eggs are just warm, then remove and beat until eggs are cold and thick. Melt 3oz plain flour with a tiny pinch salt. Sprinkle, flour in lightly until all has disappeared. Now add butter and stir in lightly. Bake in a greased and lightly-floured recessed cake tin for about 20 minutes. Turn out and allow to cool. Fill hollow with the following: Place in a saucepan i cup orange juice, 1 cup water, 2 tablespoons sugar, the juice of -J lemon. Mix 2 teaspoons cornflour with a little cold water, add to juice and bring to boil, stirring all the time. Cook until clear, then remove from gas and add 1 dessertspoon butter, a little at a time, and the grated rind of orange. If liked, a few' slices of pineapple may be placed on top and covered with the following: Boil 1 dessertspoon butter, 2 tablespoons sugar, and 2 tablespoons orange juice until brown, stirring all the time. Remove from gas and add another tablespoon orange juice or water. This cake may be used as a sweet.
