Three of the most important energyproducing foods available at the present time are oatmeal, potatoes and carrots. In war-torn England oatmeal especially is regarded as a food of the utmost value. The best-known way of using this is, of course, in the “halesome parritch’’; but try the children with these two dishes as well. Savoury Dumplings. Put 11b oatmeal into the oven and allow it to toast for a short time. This considerably improves its flavour. With it mix Coz shredded suet, a mediumsized onion—finely chopped—and a seasoning of salt and pepper. Bind the mixture together with a beaten egg and a very little milk and make into a dumpling. Put it into a scalded and floured cloth and boil it as you. would a suet pudding. Serve it with a little hot gravy, with whatever hot meat and vegetables will most appeal. • J I Vegetable Oatmeal Pie. i A vegetable pie covered with oatmeal pastry and served with strips of cooked carrots and little grilled mushrooms if obtainable is a tasty dish on a cold day. You need equal quantities of potatoes, turnips and celery, cut into small pieces, are first of all partly cooked in salted water and then drained. Pack these into a pie-dish, putting among them some slices of tomato. Add a little stock. Cover with a piece of oatmeal pastry, made as follows: Use 3oz each of fine oatmeal and flour, 2oz dripping, 3oz mashed potato, a small teaspoonful baking powder, 1 teaspoon salt and a little cold water. Rub the fat into the flour—with which the baking powder has been sifted, then add the rest of the dry ingredients and use a little cold water to make a smooth paste. Roll out and use.
