FOR FRIDAY’S DINNER

FRIED FILLETS FISH. Prepare fish fillets and soak them in a little lemon, pepper and salt, and if liked 1 tablespoon white wine. Melt 1 tablespoon margarine in a saucepan, add 1 tablespoon flour, cook a little, then add 1 cup milk, stir until it is thick and leaves the sides of the pan. Add 1 dozen chopped oysters, the grated rind of A lemon, salt and pepper to taste, a little finely-chopped parsley. Divide the mixture into as many pieces as there are fillets and place a portion on cacti fillet and roll up carefully. Place in a baking dish, cover with buttered paper, and cook slowly for 20 minutes. Remove from oven and allow to cool. The rolls may be dipped in good frying batter or in egg and breadcrumbs and fried until a golden brown. Dish up on to a hot meat dish and garnish with Saratoga chips and slices of grilled tomato.
