SUNDAY SUPPER DISH

APPLE CAKE. Sift 3 level cups plain flour. 2 level teaspoons bicarbonate of soda, 2 level teaspoons cinnamon, j level teaspoon salt, and if liked a little ground cloves. Chop 11b raisins and mix with 2 tablespoons finely-chopped mixed peel, 2 cups chopped walnuts and peanuts mixed, and J cup of the sifted flour. Cream 4oz butter well, add 1 small teacup brown sugar, and beat until very light. Add 2 well-beaten eggs, gradually, beating well all the time. Add 1 grated apple, then the flour alternately with 2 cups very thick apple, previously cooked with as little water as possible and rubbed through a fine sieve. Lastly add fruit and mix well together. Put mixture into a square tin. previously greased and lightly floured. Bake in a moderate oven for about one hour.
