EGG & MACARONI CROQUETTES. Melt 1 tablespoon butter or margarine in a saucepan, add 1 heaped tablespoon flour, cook a little, then add 1 cup milk, pepper and salt to taste, and a little grated nutmeg or ground mace. Stir over gas until it leaves the pan quite clean. Chop 1 cup cooked macaroni finely, also three hard-boiled eggs. Add to sauce and mix well together. Form mixture into round flat cakes, then roll .in flour, then in egg and breadcrumbs. Fry in boiling fat until a golden brown. Drain well and serve piping hot.
