BAKED EGG AND TOMATO

A BREAKFAST DISH. Scoop out the centres of large tomatoes and sprinkle the inside with salt and pepper. Place on a buttered dish and cook a little in a moderate oven. Melt 1 tablespoon butter in a pan, add 2 tablespoons finely-chopped raw fish, pepper and taste, 2 beaten eggs and 1 tablespoon milk, 1 . teaspoon chopped parsley, the grated rind of i lemon. Stir over gas until almost set, then fill prepared tomatoes. Sprinkle with buttered crumbs and bake in hot oven for a few minutes. This amount will fill 6 large tomatoes.
