PANCAKES
HOW TO MAKE THEM. The basic pancake recipe is as follows: Sift 4oz. plain flour with a good pinch salt and make a bay in the middle. Drop in 1 whole egg, a little cold milk, and beat until quite smooth. Add a few drops of olive oil or 1 dessertspoon melted butter, then more milk, using half a pint altogether. Cover batter and allow to stand for at least 1 hour before using. To cook the pancakes, melt a little butter or good dripping in a small frying pan, and when smoking hot, but not burning, add enough batter to cover bottom of pan, moving pan so batter will spread evenly over bottom. When set, loosen edges, with a knife, then toss or turn and brown. Slip pancakes on to a plate sprinkled with sugar. Roll, up, serve with sugar or lemon, or they may be filled with fruit, such as apples cut into dice and cooked with a little brown sugar, butter, a few raisins, a little ground cinnamon. If wanted for a special occasion add a few drops of brandy to mixture. Pineapple is also a delicious filling when chopped and cooked with a little butter and brown sugar until it acquires a caramel flavour.
