FOR FRIDAY’S DINNER

SALMON A LA KING. Melt 1 tablespoon butter in a saucepan, add J green pepper and J red pepper, finely chopped, or mince the green and shred the red. Also add 1 cup sliced mushrooms and fry until soft. Remove from butter and add 1 tablespoon flour to butter, cook a little, then add I cup fish stock or milk. Stir over fire until sauce thickens. Now add 1 large tin salmon carefully flaked. Heat thoroughly, then add 1 egg-yolk, beaten with i cup sour cream, the mushrooms, .etc. Add salt and pepper to taste and heat thoroughly without allowing mixture to boil.
