TRY THIS FOR LUNCH
SAVOURY LOAF. Remove fat and trim. 1 small ox tail and cut into joints; place in saucepan with 4 cloves, 6 peppercorns, 2 bayleaves. 2 or 3 blades of mace, 3 sliced onions, and a tiny clove of garlic. Just cover with water and simmer gently until tender, but not falling to pieces. Remove meat from liquid and.place in a mould with 11b pork sausages, previously boiled for 10 minutes, then remove from skins and cut into slices. Remove fat from liquid and add 1 tablespoons gelatine to each 2 cups liquid. Fill mould and place aside to become firm. Turn out and cut into thin slices and serve with salads.
