TRY THIS FOR DINNER
APRICOT AND RICE MERINGUE. Cook ?. cup well-washed rice in 2A cups milk.' with sugar to taste, until tender and creamy. (It may be cooked in fireproof dish in oven). Place skinned and halved apricots on top and sprinkle with sugar. (To skin, dip in boiling water for 1 minute). Beat the whites of 2 eggs until stiff, gradually add 3oz. sugar and 1 level dessertspoon cornflour and a few drops almond or vanilla essence. Pile on top and bake until meringue is set and a nice fawn colour.
